Gluten Free – Pumpkin Chocolate Chip Bread
2 cups. pure cane sugar
⅔ cup. water
½ cup. olive oil
3 cups. Miracles Flour Blend
1 tsp. baking soda
1 Tbl. baking powder
1 tsp. nutmeg
1 tsp. cinnamon
1 ½ tsp. salt
2 tsp. Xanthan gum
2 c. pumpkin, cooked
2 c. mini Semi Sweet Choc. Chips
- Preheat oven to 350. Combine sugar, oil, eggs, nutmeg, cinnamon, and salt in Stand Mixer. Now add your pumpkin.
- Mix dry ingredients in large bowl with whisk and add 1 cup at a time to wet ingredients. Mix until batter is smooth. Add Choc chips.
- Pour into 2 greased loaf pans. I use Stoneware and don’t have to grease it.
- Bake for 1 hour. Let cook and slide out of pans.
