1 cup pure cane sugar
½ cup virgin olive oil
1 cup + 2 Tbl. pumpkin puree
½ tsp. nutmeg
½ tsp. cinnamon
½ tsp. Celtic Sea Salt
½ tsp. baking soda
1 Tbl. baking powder
1 tsp. guar gum (can use xanthan gum)
1 ½ cups <+ 2 Tbl. Miracle Flour Blend
½ cup water
1. Preheat oven to 375. Spray muffin tins with oil or line.
2. Combine first three ingredients in bowl of stand mixer. Add pumpkin and the rest of the ingredients. Mix well. Add the water last a little at a time to smooth it out.
3. Pour batter into prepared muffin tins, ¾ of way full.
4. Bake for 22 minutes or until center is completely set and cake tester comes out of muffin center clean. Makes 9 muffins.
*You can add pecans, walnuts or chocolate chips to batter or tops before baking.
